Is there anything nicer than waking up on the weekend after a deliciously long sleep, and digging your fork into a freshly baked batch of pancakes whilst still in your pj’s? Umm, yes, yes there is. If the pancakes happen to be low fat, sugar-free (well, unless you choose to smoother them in Nutella), flourless, and super quick and easy to make. So quick and easy in fact that you can whizz them up in minutes with a blender

I guarantee these fluffy pancakes will soon become part of your weekend morning ritual... Or weekday treat to chase those blues away.

Recipe

Delicious Sugar-Free Banana Pancakes

Serves: 2

Ingredients

  • 2 eggs
  • 2 peeled bananas
  • ½ cup rolled oats
  • ½ teaspoon baking powder
  • pinch of salt
  • tsp of vanilla extract
  • maple syrup, toffee sauce, or Nutella to serve (optional)
  • fresh fruit of your choice, to serve

Method

  1. In a blender, combine the banana, eggs, oats, baking powder, vanilla extract and salt.
  2. Blend until the mixture is silky smooth and combined well. 
  3. Allow the batter to stand for 10-20 minutes until thickened slightly.
  4. Grease a pan with coconut oil or cooking spray and place over a medium heat.
  5. Fry spoonfuls of the batter (use an ice-cream scoop for equal measures) until large bubbles appear on the surface and they’re golden brown. Flip and repeat.
  6. Serve with a drizzle (or ladle full if you’re feeling particularly indulgent) of your chosen sauce and fresh fruit of your choice. My favourite is strawberries and raspberries but you can try anything!
